1766年12月5日，詹姆斯·佳士得在伦敦进行了他的首次拍卖；自此，佳士得拍卖行致力为顾客提供优质精良的服务。作风稳健、极富幽默感的詹姆斯·佳士得将拍卖演变为一项精致的艺术，并于18世纪至19世纪期间进行了多场非常重要的拍卖。

佳士得在香港的拍卖始于1986年。首次拍卖以19和20世纪的绘画及翡翠珠宝为主，拍卖总成交额超过1,400万港币（约179万美元）。一年后，瓷器和杂项也纳入拍卖项目。现在，香港佳士得每年推出两次拍卖，分别于每年的五月底和十一月底进行。拍卖种类高达十项，包括东南亚现代及当代艺术、中国二十世纪艺术、亚洲当代艺术、中国古代书画、中国近现代画、中国宫廷御制艺术精品、中国瓷器及工艺精品、精致名表、瑰丽珠宝及翡翠首饰...
